The GTA 6 editions that actually exist
There is no GTA 6 Deluxe Edition and no Collector's Edition. On its own product page Rockstar names a single edition above the standard one, the Ultimate Edition, and names no other.
What the publisher actually names
On the official GTA 6 page, Rockstar describes an Ultimate Edition and presents it as a collection of in-game items running through the story. That is the only named edition above the standard game.
The word Deluxe does not appear on that page. Neither does Collector's Edition. This matters more than it looks: the publisher has clearly filled in the field, since it names one edition there. An edition it does not name in the place where it names the others has not been announced.
That is a different statement from « it does not exist ». It means: as of the date this guide was checked, the publisher has announced no such thing.
Why people search for a Deluxe Edition anyway
Deluxe is the house word of other publishers. Plenty of big releases ship a Standard, a Deluxe and sometimes a Collector's or Gold tier, so the name travels ahead of the game and readers assume it applies here too.
Search suggestions then make the assumption look confirmed. A phrase typed often enough starts being suggested to everyone, whether or not the thing it names is real. A suggestion measures what people ask, never what exists.

If you were holding out for a Deluxe tier

If a shop or a video shows you a GTA 6 Deluxe Edition, treat it as a red flag rather than as news. Either the name is invented, or it belongs to a different game, or it is a regional bundle a retailer assembled on its own, which is not a publisher edition and carries no in-game content.
A publisher can add an edition at any point. If that happens, it will appear first on the publisher's own page, which is exactly where you should look.

Open the official game page and use your browser's find function on the word Deluxe. Then do the same on the store page for your platform.
If the word is absent from both, no such edition has been announced. If it appears, read the sentence around it: the word often shows up in a review filter or in an advert for another game, which proves nothing at all.
Check the publisher first and the store second. A store lists what it sells; the publisher decides what exists.
